"NINBEN" was founded in 1699. Tokyo's Nihonbashi is our place of origin. We want to pass down "Katsuobushi," dried bonito -- a kind of fermented food, which is a source of pride of Japan, to the subsequent generations and allow people around the world to experience the good taste of Dashi, soup stock. Demonstration of shaving dried bonito and the NIHONBASHI DASHI BAR with the concept of "one soup and one side dish" are popular, too. Please stop by.
